Today I decided on a whim to go to Panera bread. This was the first time I have ever dined there and I decided on the portabella mushroom sandwich. I do not eat any meat or cheese (vegan) so I wanted the mozerella off the sandwich. When requesting this I was told that there are no substitutions including aditions or subtractions on the sandwiches. I decided on getting the cold veggie minus the cheese adn cucumber dressing. Although the cold sandwich was adaquite (the roasted pepers was a nice touch on an otherwise bland overdone veggie sandwich) - I had my heart set on the portabela sandwich.
I don't know why that policy is in place. Certainly can't be a cost issue since removing cheese removes one of the most expensive ingredients of teh sandwich. And I don't see how even if the hot mushrooms were premade how something could stay longer than 15 minutes or so without the oil starting to seperate out of the cheese. I would assume that the cheese is added on twards teh end of the process so the cheese looks freshly melted if melted at all.
I think that policy should be reevaluated so vegans have more of a choice at your establishment.

of making a Panini sandwich, so that you might better understand how they
are prepared and why we will not subsitute or delete any items off of the
Panini sandwiches are prepared fresh every morning. Each sandwich is built
according to ingredient specifications.
The sandwiches are then put into a warmer to melt the ingredients together.
Upon being ordered, the sandwich is grilled and served. Since the
ingredients are melted together before grilling we cannot remove ingredients
