Basil Summer Vinegar

Introduction
This aromatic vinegar is excellent on many vegetables. It is an excellent way to improve the smell of vegetables that would otherwise not be liked. It aleviates bordom with common foods. It is an excellent acidifier in soups and stews. I like to wilt kale boiled 1 or 2 minuites . Drop it juicy and hot unto a rice cake, sprinkle on some gomasio and this vinegar just a bit. Then put the top on with another rice cake and eat that as a genuinely healthy snack.
Ingredients
Fresh Basil
Black Peppercorns whole
Balsamic vinegar (Alessi sweet)
Apple Cider Vinegar
Old Bay Seasoning
Fresh Garlic
A bottle that dispenses drops which has a 1" opening
Sea salt
Directions
Harvest basil before it bolts. Blanch 8 seconds in boiling water . Pour through a collander and quench briefly in cold tap water .
Scald your bottle, take care !
Drop into that bottle 21 whole black peppercorns.
Add 1/4 teaspoon Old Bay seasoning.
Slice 6 garlic cloves very thinly with a small pointed knife.
Put the garlic into the bottle and after that the basil leaves. Just poke them down with very clean fingers. If you don't like that idea then you can use any sterile wide mouth jar and after some time strain it into the drop dispenser bottle. I make this when the Alessi Balsamic Vinegar bottle is 2/3 emty and I just add this to the vinegar which is already in there. Add 1/4 cup of apple cider vinegar or slightly more. The 2 vinegars should be about equal in volume with the balsamic dominant. Other vinegars will not have the fruity notes like the apple vinegar. It's important for balance. Add a pinch of lima sea salt. Cap the bottle. Turn the bottle to distribute the spices. Set the bottle out on the counter for 4 days to a week. Then afterwards refrigerate it. The garlic and basil in the bottle are excellent added to salad dressings, roasted vegetables. A little mayonaise thinned with lemon & oil tastes great with the basil and garlic chopped late in the winter its a reminder of summer.
