Vegan fried rice
Serves/Yields: 4 servings as a side dish, or 2 as a meal
Prep. Time: 20 minutes
Cook Time: 20 minutes

Ingredients
1 1/4 c rice (use jasmine or balsami)
2 1/2 c unsalted vegetable stock or water (I use powdered instant vegetable stock and add it to the water)
4 cloves garlic - finely chopped or minced
1 Medium Onion (1 1/2 small onions) - diced about 1 cup
3/4 cup diced carrots
2 Medium button mushrooms - chopped
1 Cup frozen petite peas
1/4 cup Textured Vegetable Protein (TVP)
5 TBSP Olive Oil
1 t. Chinese five spice
2 chili pods
1/8 t. red pepper flakes
Cayenne
Black pepper
1/2 TSP salt
4 TBSP Soy Sauce
1/4 cup water or unsalted vegetable stock
1/4 c yeast flakes
Directions
1. Bring 2 1/2 c chicken stock or water to a boil, add rice and stir until the liquid boils again. Bring temp to warm, cover and let sit for 20 minutes.
2. Take 1/4 dried TVP in a small dish add 1/4 cup water, 1 TSP Soy Sauce and a large pinch of Sage. Set aside.
3. Cut up vegetables - mince/dice garlic, dice onions, chop carrots, chop mushrooms
4. Put about 4 TBSP Olive oil in a hot iron wok on med high heat.
5. Add garlic, red pepper flakes, and 1/4 tsp salt.
6. Let garlic soften, then add onions and carrots - fry for about 1 minute mix occasionally
7. Add mushrooms and 2 TBSP Soy Sauce and continue to cook for about 2 minute until vegetables have softened and the onions begin to turn translucent.
8. Move vegetables to one side of the wok. Add the TVP and mix in with vegetables and then clear off one half of the wok.
9. Add rice to empty part of the wok. Add 1 TBSP soy sauce and 1 TBSP olive oil onto the rice. Flatten out rice to fill empty half of wok and let fry.
10. Add five spice, a dash of cayenne pepper and black pepper as desired.
11. Occasionally turn rice to ensure even cooking - don't let the vegetables burn. If needed add water to soften
12. Add frozen peas and 1/4 cup water mixed with yeast flakes.
13. Toss until peas are done and water is absorbed.
